Does a fresh, healthy salad ever get old? There are so many possibilities beyond simple green lettuce: you can use herbs and flowers, fruit, nuts and vegetables. This red lettuce with beets, beet greens and pistachio nuts makes your mouth water.
This salad brings color and fragrance to your table. Root vegetables like beets are full of health-boosting nutrients, and the crunchy pistachio nuts are rich in proteins, healthy fats, and minerals. The rose water gives your dressing a slightly flowery, exotic flavor.
Remove the leaves of 300 g red chicory, rinsed. Rinse 50 g beet greens and spin them dry. Cut 500 g cooked beets into sections. Coarsely chop 100 g pistachio nuts. Mix all the ingredients in a large bowl and add some freshly ground sea salt and pepper. Whisk a thick dressing of 1,5 dl yoghurt, 2 teaspoons of rose water, 2 tablespoons of olive oil, 1 tablespoon beetroot juice, 1 tablespoon cider vinegar and sea salt to taste. Put dollops of the dressing onto the salad, then serve.
